Chicken Tortilla Salad
It is hot, to hot to cook and I miss Chicken Tortilla Soup. And then I found this,

Here is my version.
Ingredients;
2 boneless skinless chicken breasts
1 head of lettuce, iceberg or romaine
2 peppers, I used 1 red, 1 orange
1 can of black beans, drained and rinsed
1 can of kernel corn, rinsed
handful of chopped cilantro
chopped red onion
1 tomato, seeded and diced
1/2 cup grated cheese
chopped green onions
Dressing; 1 cup of sour cream, 1 tbsp ranch dressing mix, 1 tbsp taco seasoning. This is a bit thick for my liking so I thinned it with some milk
For topping; crushed tortilla chips, I used the Hint of Lime flavoured ones
diced avocados
lime wedges, for a squeeze on top of it all
I BBQ'd the chicken breasts with a little chipotle, cumin and olive oil. Then I shredded them in my Kitchenaid. I love my Kitchenaid.
Combine all the ingredients, serve with dressing on the side, and toppings.
I guess you could add in the avocados and crushed tortilla chips, but I didn't want brown bits of avocado and mushy chips in my salad if there was leftovers.
Now eat.
